I used a full medium sized onion, although Thomas only mentions it in passing later in the recipe, a full medium carrot, and a full stick of celery.

I added about a glass of red wine. Then drank the rest of the bottle while cooking. A wise choice.

It was in the oven for approximately 30 minutes, until it looked like much of the juice had been absorbed.

I have to say that I had my doubts. When I make Bolognese I add a lot more tomatoes, and also Tomato puree, and I worried this would not be to my tastes, but it was in fact delicious!
I largely believe that Celery is the Thor of the food word, in that it is pointless, tasteless, bland, and thinks it should be King of Asgard when it SHOULD NOT, IT SHOULD BE ME! I will admit that, just this once, I was wrong. The cooked celery was a wonderful addition to this dish, and I shall be cooking Tom Hiddleston’s Bolognese again! I may also be cooking Thor. Perhaps it will improve him too?
